These are not Snickerdoodle cookies. I know they may look like it and you may be tempted to call them Snickerdoodle cookies, but they are not. Snickerdoodle cookies are a bit chewy, a bit on the flatter side and don’t have baking powder in them. These cookies are fluffy (because they do have baking powder in them), soft, not overly sweet and they melt in your mouth. So next time you want a little change from Snickerdoodle cookies, give these a try, you won’t regret it. 🙂
My mom used to bake a lot when we were kids and she had a lot of cookbooks. This recipe was one of the popular ones she made from one of her cookbooks except they were called Cinnamon S Cookies and were also shaped like S’s. When I was a kid, one of the few times you would see me in the kitchen was when my mom would make these because I enjoyed rolling the dough with my hands then shaping them into S’s.
Needless to say, this is a great recipe to make with kids if you want to stay true to the original recipe. They would enjoy shaping the dough into S’s. Of course you don’t have to be a kid to shape them that way, you are grown, you can shape them however way you want. I would do the S shape to stay true to the original recipe but ain’t no body got time for that. They will still taste good.
This recipe yields about 30 cookies.
- 1 cup butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 2 3/4 cups flour
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 3 tablespoons sugar
Preheat oven to 375ºF. Spray a baking sheet with cooking spray and set aside.
In a bowl, cream together butter and 1 cup of sugar. Add eggs, vanilla and salt then mix until completely combined. Mix in flour and baking power and mix until it forms a dough. If your dough is too soft and not easy to work with, refrigerate for a couple of minutes.
Mix cinnamon and 3 tablespoons of sugar in a small bowl. Roll your dough into 1 inch sized balls, roll it in the sugar and cinnamon mixture until completely coated, then place on your baking sheet about 2 inches apart.
Place baking sheet in the oven and bake for about 8 to 10 minutes. At this point the cookies will puff up but they won’t be golden brown. Take them out of the oven and let them cool completely. Enjoy!
