Buttery Homemade Waffles

I have shared my go to pancakes recipe with you. Now it is time for me to introduce you to my buttery homemade waffles. These waffles are fluffy, buttery and simply delicious. They are so good you may find yourself just eating them plain but of course they are also great with syrup or with fruit and whipped cream. I am extra and I love all the fixings on mine. With Mother’s day coming soon, these waffles will be the perfect addition to your brunch table.

When it comes to the pancakes vs waffles debate, I’m usually on team pancakes. That’s probably because I hadn’t found waffles I loved yet. But this recipe brings waffles almost neck and neck with pancakes for me (pancakes are still my number one though :D). So many things make these waffles special; the fluffiness created by the cornstarch, the silkiness from the butter, the combination of the sweetness and the vanilla that gives it an almost cakey flavor. I am sure you will enjoy these buttery homemade waffles so get all your ingredients ready for your next brunch!

Some Tips
  • Let the batter rest in the fridge for at least 10 minutes before you make the waffles. This helps the gluten expand and makes a more tender waffle.
  • For a crispy waffle, let the waffles cook until golden and place them on a cooling rack. Do not stack the waffles like I did above unless you are like me and like your waffles soft. If that’s the case, you can stack them or even take them out before they get completely golden.
  • These are best served immediately. They don’t have the same fluffy texture when they get cold. You can keep them warm in the oven at a low temperature (unstacked) or reheat them in the oven. You can also reheat them in the microwave but reheating gluten based foods in the microwave is risky business so do that at your own risk.

Ingredients

  • 1 3/4 cups all purpose flour
  • 1/4 cup cornstarch
  • 4 tsps baking powder
  • 1/2 tsp salt
  • 6 tbsps sugar
  • 2 eggs
  • 2 cups milk
  • 1/2 cup butter melted
  • 1 tsp vanilla

Instructions

  • Mix flour, cornstarch, baking powder, salt and sugar in a large bowl.
  • Make a hole in the middle of the flour mixture and add eggs, milk and vanilla. Mix until blended.
  • Add melted butter and mix until fully incorporated. Let rest for 10 minutes in the fridge.
  • Heat up a waffle iron and grease if necessary. Pour or ladle about 3/4 cup batter into iron.
  • Let cook until golden or until waffle iron signals it is ready. Serve immediately with fruit, whipped cream or syrup.
