Chocolate Covered Strawberries

Mother’s day is tomorrow! This one might be a challenging Mother’s day for those of you who are used to spending this day with your mothers but won’t be able to. Whether you are able to spend this day with mom or not, if you are able to give her a gift and are looking for some last minute ideas, here is one! Chocolate covered strawberries are not only delicious, they are also really pretty to look at!

Ok I’ll be honest. I don’t think chocolate covered strawberries are that great. As a matter of fact, I don’t even understand why they are a thing. You have watery strawberries with fatty chocolate; in my opinion the two don’t mix and the sweetness from the chocolate often overpowers the sweetness from the strawberries (wow, I’m really selling these! πŸ˜ƒ).

To be even more honest the only reason I made these was because I kept on seeing them at the grocery store leading up to Valentine’s Day and they were selling those things for way more than I was willing to pay but they were pretty popular. So I was like, how hard can they be to make that they will be priced that much? And I decided to make them. So there you have it, the real back story.

The important thing though is that people love chocolate covered strawberries. And if you love it, I don’t mind showing you how to make it. I do love chocolate and I do love strawberries so I think of them separately when I eat them. And they do look pretty (though mine are not the prettiest). So only gift these to mom if she loves them! If not you can make them for yourself if you love them.

To make these even better, I’ve given you options. You don’t have to settle for only chocolate, you can dip them in crushed nuts, cookie crumbs, crushed candy, sprinkles, you can go wild. Either way, I hope you and your mom enjoy these and Happy Mother’s Day to all you mothers out there!

Chocolate Covered Strawberries

  • 1 pound Strawberries
  • 1 cup milk or dark chocolate
  • 1 cup white Chocolate
  • 2 tablespoons coconut oil
  • 1 cup crushed peanuts
  • 1 cup Graham crackers or cookie crumbs

Method

Put a tablespoon of coconut oil in the bowl with milk/dark chocolate and melt in the microwave or in a double boiler checking and stirring periodically. Repeat with white chocolate.

For Chocolate Drizzled Strawberries

Insert a toothpick into the top of a strawberry. Coat strawberry completely in chocolate, alternating between white and milk.

Let the Strawberries cool in the fridge for about 10 minutes. Drizzle white chocolate strawberries with milk chocolate and milk chocolate strawberries with white chocolate in a quick back and forth motion.

Let them chill for 15 minutes or until hardened.

For Crushed Peanuts or Cookie Crumbs Covered Strawberries

Insert a toothpick into the top of a strawberry. Coat strawberry completely in chocolate, alternating between white and milk then immediately dip in either crushed cookies or nuts.

Let them chill for 15 minutes or until hardened.

Place the assorted strawberries in a pretty container or box and give them to mom. Or enjoy!
