Fruit Pizza Cookies
It’s finally Summer! Which means it is time for all the refreshing recipes, like this one! These Fruit Pizza Cookies are a more convenient take on the fruit pizzas that you may have seen at or brought to a fourth of July event. They consist of amazing sugar cookies that are soft with a slight chew. Which are then frosted with a tasty cream cheese frosting then topped with fresh fruit. Wether you have had fruit pizzas before or not, this recipe is a must try even just for the sugar cookie alone. So go get the ingredients below and make them this weekend!
I know it’s been a minute since I posted a recipe; times are hard 😩 But! I couldn’t let the 4th of July go by without sharing this recipe with you. These fruit pizza cookies are truly so delicious (and hard to stop eating). And because they are individual cookies, you don’t need to worry about people slicing them all kinds of ways and making a mess. Plus if you want to be a little cautious considering this ongoing pandemic, you could package them individually. But before you make them, below are a few things to consider.
Some Tips
- My cookie dough recipe is pretty amazing but if you want to cut down on some time, you may used a store bought sugar cookie dough.
- Though I used blueberries, strawberries and kiwis for this recipe, you may use other types of fruits as well. Mangos, grapes, blackberries, papayas, you name it.
- If you still prefer the idea of one large cookie pizza, then feel free to go that route instead. You will just have to bake the cookie for a longer period of time (about 15 to 20 minutes). And I suggest baking it at 325ºF instead or 350ºF.
- Even though serving them at room temperature isn’t a deal breaker, these cookies are best served cold. So if making them for an event, make them hours in advance so you can give them enough time to cool after baking and once more after assembling.
Fruit Pizza Cookies
Ingredients
Cookie Dough
- 1 cup butter softened
- 1 1/2 cup sugar
- 2 eggs
- 2 tsp vanilla
- 2 3/4 cup flour 389 grams
- 1 tsp baking powder
- 1/4 tsp baking soda
- 3/4 tsp salt
Frosting
- 8 oz cream cheese 1 package, softened
- 2 tbsp butter softened
- 3/4 cup powdered sugar
- 1/2 tsp vanilla
Topping
- Blueberries, strawberries, kiwis or fruits of choice
Instructions
- Preheat oven to 350ºF. Grease a baking sheet or line it with parchment paper and set aside.
- Beat butter and sugar until white.
- Add eggs and vanilla then beat until fluffy.
- Sift in flour, baking powder, baking soda and salt. Mix until fully incorporated.
- Form dough into balls and place on a baking tray. Gently press down cookies.
- Bake for 10 to 12 minutes or until beginning to brown. Let cool on the tray for 5 minutes before transferring to a cooling rack.
- Place cream cheese, butter, powdered sugar and vanilla in a bowl and beat with an electric mixer until smooth.
- When cookies are completely cooled, spread a layer of frosting on each cookie.
- Top each cookie with fruits. Serve cold and store in the refrigerator.
