Slow Cooked Pulled Beef in Tomatoes
I know it has been months, but I come to you with a new recipe. This one is a very easy to make slow cooked pulled beef in tomatoes. The beef is juicy and tender, and smothered in a tomato sauce that is full of flavor. It is also one of those recipes where you toss everything in a slow cooker and hours later you have a hearty dish. All you need is to make some rice on the side (and some veggies if you would like) and you will have a wholesome, warm meal.
A lot has happened these last several months. I visited Cameroon in November (for the first time in 16 years!), I visited my parents in Georgia for a couple of weeks in December, and more recently I decided to rebrand my branding business, Salted Branding (by the way, I now do brand and web design if you didn’t know!). There was a lot going on but I have still wanted to keep bringing you recipes. I’ve been sharing some video recipes on social media every now and then. But it’s about time I start sharing some full recipes.
So I figured I should restart with a simple one. This is a great recipe for cooler days so there is still time to enjoy it. But honestly I would make it in any season really. You only need about 4 main ingredients and some seasonings. Letting the ingredients slowly break down together for several hours results in a well blended and aromatic dish. I served it over rice and with some roasted veggies on the side. But you can serve it over mashed potatoes, in tacos or any other way you see fit. Slow Cooked Pulled Beef in Tomatoes
Ingredients
- 3-4 lbs boneless roast beef chuck or round
- 2 large tomatoes chopped
- 1 large onion chopped
- 3-4 cloves garlic crushed
- 1-2 sprigs of thyme
- 1-2 sprigs of rosemary
- 2 tsp salt
- 1/2 tsp black pepper
Instructions
- Place beef in a slow cooker and season generously with salt and pepper on both sides.
- Add garlic, thyme and rosemary. Then top with chopped tomatoes and onions.
- Cover and set slow cooker on high for 4 to 8 hours or until you can easily shred beef with two forks. It may take longer depending on how tough the beef is but begin checking after 4 hours.
- Shred the beef and stir thoroughly. Let it cook for another 30 to 60 minutes or until the water reduces to your taste.
- Serve over rice, mashed potatoes or starch of choice with a side of vegetables or in tacos.
