Sweet Potato Home Fries
If you like sweet potatoes and you like home fries, this one is for you! These sweet potato home fries feature a bell pepper and red onion medley and the delicious aroma of rosemary along with other seasonings. It is made stove top in one pan and is ready in under 30 minutes. So if you are looking for a great breakfast or brunch side, this is the one right here.
These sweet potato home fries with some eggs and bacon was my work breakfast for over a week. (Yes, work breakfast because I am supposed to be at work so early π). It is really easy to make ahead of time. All you need to do is heat it up in a frying pan or microwave when you are ready to eat and it still tastes freshly made every time. The recipe is pretty straight forward but below are a few tips to keep in mind before you start.
Some Tips
- You can use whatever colored peppers you like for this recipe. I like it best with red, yellow or orange. Green will work fine too but may change the flavor a little.
- After adding your sweet potatoes to the pan, if you feel like they are sticking to the pan a lot or simply not shiny enough, feel free to add a little more oil.
- I used Abobo seasoning for these but you can also use your favorite seasoning mix, seasoning salt or maggi. Salt alone is a little bit basic for these but if that is what you want to use instead of Adobo, don’t let me stop you!
Sweet Potato Home Fries
Ingredients
- 3 tbsp oil
- 2 medium sweet potatoes cubed
- 1 medium red, yellow or orange bell pepper diced
- 1 small red onion diced
- 1/2 tsp fresh rosemary minced
- 1/4 tsp cayenne
- 1/4 tsp black pepper
- 1/2 tsp adobo or seasoning salt
- salt to taste
Instructions
- Pour 1 tablespoon of oil in a pan over medium high heat.
- When oil is heated, add onions and peppers and a dash of salt. SautΓ©e until they are translucent and soft.
- Take peppers and onions mix out of the pan when cooked and set aside.
- Add remaining 2 tablespoons of oil to the pan.
- Once heated, add cubed sweet potatoes to the pan and mix until coated with oil (feel free to add more oil if desired). Place a lid on the pan and let cook for about 2 or 3 minutes.
- Add rosemary, cayenne, black pepper and adobo or seasoning salt. Mix then return lid to the pan to cook the potatoes. Uncover pan occasionally to stir them so they brown evenly on all sides.
- When sweet potatoes are close to being fully cooked (about 15 minutes in), return peppers and onions to the pan and mix.
- Place the lid on the pan and continue to stir every now and then until potatoes are fork tender (another 5 minutes). Turn the heat off and serve with breakfast sides of your choice.
